I wasn't going to post this but it was so dang tasty I thought I should share.
I had eight loin chops that I coated with a blend of 2 T mayo and 1 T of Sriracha. Next a nice dose of Big Ron's"In The House" rub, then into the fridge to rest.
Five ears of sweetcorn went into a big kettle of water to soak.
This next step is from my favorite chef at the moment J. Kenji Lopez-Alt from Serious Eats.
Mix up together in a large bowl the following:
1/4 C mayo
1/4 C sour cream
1/2 C Mexican cotija cheese ( I used feta- very similar)
1/2 tsp ancho chili powder
1 clove garlic, minced
1/4 C cilantro, very finely chopped
fresh lime wedges to squeeze on corn
Set this aside until corn is cooked
Soaked corn went onto preheated GG's and turned occasionally, total time 20-25 minutes.
Chops went on next, about 4 or 5 minutes a side.
Before being plated, husks were removed and corn was put in large bowl with the cheese-sour cream concoction, and slathered up good. Each ear got a dip in the bowl, it's messy but good and worth it!
The mayo-Sriracha was nice to hold the rub. And the corn was so good! Give it a whirl!
