I didn't need no stinkin' foil...
« Reply #-1 on: July 25, 2015, 09:16:32 PM »
Y'all, I want to tell ya again how happy I am with the results I'm getting on the Pecos offset.  Since reading Aaron Franklin's book - the chapter on smoke and fire - I have been able to manage smoke and fire with complete confidence.
Today, I smoked a couple of racks of spare ribs.  I let 'em go at close to 275* - don't wince - for about 3 hours, spritzing with water along the way to keep 'em moist.  When I was going to pull and foil, I thought, "dang, these look good already." so I left 'em like they were for almost another hour.  At this point I brought the heat down to about 225* or so by not adding so much wood.
I kept checkin' 'em with the old "bend test" and when they did the "bend" they got to come off.  I let 'em rest for a long time while I cooked some wings on the smoker.
Lemme see if I can post a picture and a link:

Backyard Jack strikes again with some great looking ribs. Somewhere in Austin, Aaron Franklin is smiling at his protege in Byron.
