This comes from Joshua Bousel at Serious Eats
Marinade
1 C good beer
2 T dark sesame oil
1 T garlic, minced
1 tsp oregano
1 tsp kosher salt
1/2 tsp black pepper
1/4 tsp cayenne pepper
Mix everything in a bowl. Set aside.
I used 2 lbs of chicken tenders (tendons pulled out)
Place chicken in gallon bag, pour marinade over and refrigerate 2 to 8 hours. Mine got 2 hours
Next you will need 2 cups of your favorite guacamole.
Ok time to grill the chicken to your liking. The tenders cook fast so about 2 1/2 minutes a side is all they needed on the PK with preheated GrillGrates.When done rest the chicken. It's time to heat the tortillas and place a healthy spoon of guacamole in each tortilla and top with chicken and serve. I added Sriracha to mine and a sprinkle of grated cheddar.
Very quick and tasty!
The eggplant was oiled, salted and grilled. When done was cut up into 3/4" cubes and put in a bowl with a bit of smoked salt, chili garlic paste, a bit of fish sauce and chopped green onions. Done! Lots of flavor here and quick and easy too!
