Cut the flippers off the wangs to fit more on the racks. Sprayed all 48 of them with cooking spray then dusted with Miners Mix Poultry rub. Gonna send my taste buds back to California in the 1850's!! Sprinkled on a bit of corn starch. One small pc of mesquite and one larger pc of apple for the smoke.
Set for 240, gonna go for a 4 hour whirl!!

The dusting of corn starch really did the trick on the skin!! Not extra crispy..not rubbery either....this was KCBS jusdge type of skin!!



That was just the first helping!!

I think the next time I will mix the rub in with the corn starch then Pam spray the wings and roll em quickly in the starch/rub mixture........

for yesterdays cook after I pammed and shaked the seasoning on the wings, I just lightly sprinkled the corn starch over em and then hit them with another quick spray of Pam..........and another sprinkle of Miners Mix  for good measure......

I love the way that coating looks. That trick with the corn starch really seems to work well.

A similar trick we picked up from Chef John over at FoodWishes.com is to simply toss in a TBS or so of flour in with the rub when coating the chicken.

I'll have to give the corn starch  a try.
