Read an article on comp ribs and prep, most teams just rub and cook while Myron Mixon  brines his for four hrs before smoking

Just wonder what y'all think...

I have a friend that swears by using a brine with ribs.  I don't, however I would be open to it if I had a real fridge and not a side by side.

I think he is nuts. I just looked up his standing in the KCBS rib category and found that he is in 138th place in competition ribs.

Another thing, his recipe which is different on several websites is NOT a brine but is a marinade.

Google Jack's Old South rib recipe and check his recipe for ribs and see that he tells it different on each article or website.

I think I will stick with my no-brine ribs.

  I have not liked the brined ribs as well as not.
  A good rub and a few hours to rest before the cook works very well as does plain smoked and finished with a sauce.

I pack my ribs in onion black pepper and dark brown sugar the night before and then wipe off the sludge in the morn and then rub............no brine......

Wet brine, NEVER. Dry brine i.e. salt a night or two before, ALWAYS.

Friends of mine are currently 6th in the KCBS standings. Last year at the Jack they came in 6th overall and 1st in ribs. They don't marinade their ribs.
Why couldn't Noah have swatted the 2 mosquitoes?.

I don't brine or marinade. I did do some ham wet cured ribs a while back I did like. They were like eating ham on a stick. Don

Sometimes i do beef ribs pastrami . This is when i brine my ribs .
I think is time to do it again .
