Yin and Yang Chicken

The Yin and Yang of Chicken … How about a Spatchcock Chicken with off-setting seasoning/rubs to please different tastes! Used Roasted Garlic EVOO for the glue on/under the skin with Fagundes Seasoning for the Yin and Plowboys BBQ Yardbird Rub for the Yang.  The best of both worlds!!  Wrapped the spatchcocked chicken with plastic wrap and refrigerated for 4 hours.



Hickory smoked the chicken for an hour and finished it off at 400º until the breast IT reached 170º.

Smart. I usually make two birds. Never thought to split one. Did you remove the chine bone? I do, but I think some don't. Not sure if it makes a difference or not.

Didn't eat from both sides that night.  We ate from the Yin side (Fagundes Seasoning) that evening and yesterday had the Yang side (Plowboys BBQ Yardbird Rub) Chicken salad ...  :P  :P  ... Both seasonings are distinctly different but wonderful!!!  ;D
