X2 and a swell looking hunk of meat too!

Smoke, I think I've told you that I use two cake pans which fit the bottom of the PK perfectly. One I drilled 40 - 50  3/8" holes, that obviously is the coal pan, the other is for catching drippings when offset cooking. When doing steaks the coal pan is simply moved to the center of PK. Since I've gone this route I have no worries with ashes or sparks. I've placed a grill pad under the PK and she sets worry-free on our deck!

I am going to try that. I use and old cake pan that sits on the bottom shelve of the PK to catch the ashes. But the mountain winds swirl and send everything scattering. Will try the internal ash pan method.  :)
