First Brisket on my Chef Camp PG24LTD

Weather report indicates today is the last day of warm (50 degrees) weather, so I've decided to go at this packer I purchased from Costco.

My local Costco stocks brisket graded PRIME at a cost of $2.79/lb

Pre-trim weight of 15 lbs, this sucker is gonna take some time.

Trim on the fat cap, scored and punctured with knife. Rubbed with yellow mustard and seasoned with OakRidgeBBQ Black OPS Brisket Rub.

The brisket is wrapped in plastic and back in fridge for the next 4-5 hours.

Estimate the cook to take between 15-17 hours (1 hour per pound, plus 2).

Llow smoke on PG24 filled with Cookinpellets.com's "perfect mix" for 6 hours.

Then, I will transfer brisket into my Nesco roaster oven, add some beef broth, set roaster to 225 and let that baby cook through the night.

Wow! I can barely find Choice for $3.

On the other hand, I don't have to worry about doing a cook before the temp drops below 50o.

Great price on a Briskie. I have seen em for 2.79 a lb as well...gonna have to jump on one...in the meantime.....I will wait to see how yours comes out  8)

True...but I have spent time in tropical climes....There are parts of the human body that sweat - which were never intended to. I remember "the rash".... :o ??? ::) 8). At least where I live - I can put on more clothes if I am cold. Last I checked - public nudity laws in Hu-why-yuh does not allow shelless turtles to stroll about.... :D :D :D
