Started with these...



Then a pot filled with one large onion, 36 ounces of beer, some Tajin and garlic salt..



Bring to a boil...



Drop the brats in, cover and cut the heat to lowest flame for 10 minutes. You don't want to boil them and cook out the fat. Only slightly cooked so they get the beer and onion flavor. You will finish on the grill...





Then I got the buns ready. Some cheese butter on the inside of them...





After removing the brats from the beer the onions were removed from the liquid and put in a hot cast iron skillet with liquid gold to finish cooking...





The brats are ready for the Air-Grill with a couple serranos in tow...



Circling the wagons...



Getting some wood fire and smoke...



Brats are done...






Broke out the Beaver...



Plated with tater salad and mojo potatoes...







Soooo good!!!

As some know, I'm opposed to the boiling of any meat but given the high-heat output of your grill I understand the drowning of sausages here! :D
Not trying to start an argument,  just oppose the mistreatment of meat! :D
