Sous Vide and Cook Air pork loin.
« Reply #-1 on: February 04, 2016, 10:32:09 AM »
We had record high temp here yesterday, so I got out the Cook Air Grill for the first time. I brined a small pork loin for a few hours and then sous vide in my homemade bath for 4 hours at 60 Celsius. (140f)

On to the Cook Air with apple and peach wood.
Still a little cold here so only got to 765 degrees but did the job nicely.
I'll be using this a lot in the spring for sure. If you're on the fence about this cooker, just get it. No regrets.

Super moist and tender pork just melted in your mouth.

Plated with fresh broccoli and cauliflower mushroom soup bake with crispy onions sprinkled on top.
That cost more than the pork. I may have to try frozen veggies.

Great looking loin! Seared to perfection!

Glad the Cook-Air worked well for you. I am really enjoying mine.

I have been using Hickory chunks and that makes for even more heat I found. Obviously the type of wood can increase or decrease temps some.

You kinda got me wanting one for searing. Then I don't have to kill a starter of charcoal for my Weber.

For searing I don't think this can be beat. I used 4 small chunks of apple wood and 1 of peach to sear the pork. I used a small piece of Styrofoam lighter to light and got to 765 in about 5-6 minutes. I know in the summer this thing will hit 1000 degrees no problem. Near the end I turned the fan to #1 and put the lid on to get a nice smoke flavor.

Pappy this is one reason I love this grill. Super hot in 5 minutes with just a couple chunks of wood.

Could a guy use the Weber cubes to light the wood? I have a ton of those

I don't see why you could not cut off a chunk and use it to light. I just take a small piece of wood with fluid to get it going.
