Yesterday being Friday, the plan was to go out for dinner and eat at one of the many local establishments offering Lenten fish specials. The trouble was, it was an absolutely gorgeous day with temps around 60F. Dinner out was cancelled, but not before I left work an hour early!
A few TGIF beers and grilled food was in our near future!
I found a 6 lb hen and some nice looking asparagus at a market on the way home from work.
I decided to make beer can chicken using my Vortex on the '68 Weber 18" kettle. The hen was cleaned up a bit, rubbed with an anonymous rub found in my cache, and a bit of rub was mixed into the can of Linenkugel's Ginger Shandy. Outside the old grill got set up with the Vortex, some charcoal laid around and a small chimney of lit added to the mix along with a handful of applewood. The big hen sat down nicely on the can and the cook was on until the breast got to an IT of 157F. It turned out wonderfully moist and juicy inside and crispy outside! It must have been good as Mrs Hikerman gave me the thumbs up sign and a pat on the butt!
This was plated with asparagus bundles and twice-baked sweet potatoes, a great Friday night meal!
