Man card fully engaged. Wet Brined for 24 hours and then let air dry in the fridge for another 24 hours. Injected with butter and lemon juice.
Fired up charcoal and a small piece of apple wood. Cooked indirect on the Weber Performer.
The breast was pulled at 158 degrees and rested about 30 minutes.
The turkey came out fantastic! Very moist.
Loaded Taters.....can't miss with those.
