Too many great ideas and too little time - another one bookmarked. Thanks!

x2

Saw a PK on craigslist for $20, only one picture of the outside but "Aluminum PK Charcoal Grill. Quality older grill that needs a good cleaning and new internal grates for use."  Emailed an inquiry, waiting a reply.

Get it and get it quick. Pk sells all the replacement parts it could possibly need on their web-site  8)

Oh in case anyone is interested,  the brine I used is simple and extremely tasty! Here it is....

Honey Brine for Poultry
 3/4 C kosher salt
 1/2 C sugar
 1/2 C honey

In a large pan/kettle get 1 gal. water boiling, add in all ingredients and stir until dissolved. Take off heat and when cool, immerse chicken/poultry in brine for 18 hours. It's a long time but you will be more than happy with your results!

Darn good looking yard bird.  Sure with Milt could have stayed in business.....he had a really good product.... :(

I still have like 8 bags of his pellets. They are like gold to me now...

Gene that chicken looks so good!

Never used them but I have 8 or do bags myself in the garage.  Usually forget I have them

Maybe I will have to pull them out to make a chicken like this

Yeah I came across about 6 or 7 bags 1lb'ers I think.  Mostly apricot-rosemary but one merlot or some red wine.
Wish I would have bought a 20 lb bag before he went out of business! The guy could make some sweet pellets!!!!
Gonna have to use wisely!
