Stuffed Meatloaf on the Lonely Daniel Boone

We have an upcoming family wedding and today was our niece's shower. So both of our daughters are here  :) and they wanted meatloaf for dinner. So meatloaf it is....only this is a variation of a BBQ Pitboy's recipe. Mixed up 3 lbs of chuck with 1 lb grnd pork seasoned with S P& WOW. Rolled out, steak sauce, onion, celery, 3/4lb cooked bacon diced, and finally Asiago cheese all placed on top. Rolled up, more steak sauce, and bacon strips on top. Now into the pellet grill @ 275F. It's going to be a little crazy here later so I'm posting this now and will post finished pics later......chow! :D

Oh the lonely Daniel Boone thing is that since the PK showed up the pellet pooper had to take a back seat!  ::)

I'm sorry but I don't know, it took longer than expected, got to IT of 160F I'd guess about 2 hrs.
