How was the salt level after soaking it for 24 hours?
It didn't taste salty at all Cliff! Don

Thanks Don!  I have not done an easy pastrami using a pre-corned beef since five years ago.  The one I did was just too salty,  and ever since I've just corned my own beef.

I may have to give one of these another try soaking it for 24 hours like you did.

I see pastrami in my future! Been a while since I've made any, but at this price I couldn't pass up the chance. I've used points in the past with good results. Of course I prefer flats but at .99/lb points it is!

Cliff I did this recently as well. The first few times I followed this recipe I changed the water 4 times over a 36 hour soak. This last time just twice in 24 hours and it tasted about the same. Rinsing it very well at first I think is ultimately important. Ice cream and pastrami are two of my weaknesses in life!  ::)
