Smoke setting on the traeger

I am using the traeger for the first time to smoke some ribs. The recipe I am using says smokes for 3 hours on smoke setting. Set to 225 Then 2 hours in foil then 1 hours out of foil. What temp should the smoke setting be showing. I am getting around 181-195.... Is that right?

yup. Kind of like the smoke setting on the Camp Chef grill.

Traeger has some good recipes on their site, is this where you got this technique from??

Yes but used jeffs rub instead of traeger

So I just set it to the 225 setting. Now its holding around 244-250? Should I adjust it back down to the 180 setting? or just leave it alone

Ok thanks...  I am guessing this is why  people upgrade to a  PID controller to be able to dial in the temp better

With the temps you posted, you don't need a new controller.  Those temps ok, the meat doesn't know the difference.

so the temp on the grill has went form 225 to as high as 280, is this normal? The 732 is showing 264 right now. Probe is in the center of the smoker.

People get concerned when they get a pellet grill and the temps vary and swing.......no different than what us charcoal/wood guys go through and everything comes out great......just like your cook will .............. 8)

So it came out pretty good... I probably could have pulled it a little earlier
