Looks great to me! I have a Traeger and a Pit Boss pellet grill and they both have temp swings so don't worry too much about it  ;)
A revolving door of cookers and smokers. Some are keepers, some are here today, gone tomorrow!

Question.   Do you thinking adding two 12" smoke tubes would be to much for the Rec Tec 680?

All depends on how much you like smoke, and what your Smokin, might be too much for some meats such as chicken or fish, my suggestion would be to start with 1 and if you feel that it's not enough than you can always add another.  Good Luck  :)
