Smoked Tri-Tip on GMG DC

Picked up a beautiful free range grass fed Angus beef Tri-Tip roast at a local butcher shop in Columbia Falls, MT. When I quizzed the butcher about the grade he showed me the marbling which could/should have been prime but was officially graded as choice. Here's the Tri-Tip ... what do you think? Choice or Prime?







During the cook a weather front came through and I got concerned about the thunder storm - nothing came of the thunder and lightning but all of a sudden the sky opened up and everything got pelted with sleet for almost 20 minutes. Fortunately my Green Mountain Grill Davy Crockett weathered the storm beautifully. The WiFi module really came in handy allowing me to monitor and control the pit temp nicely from within the RV.

Tasty and based on that I think it is time I try a Tri-Tip.
After years of smoking and grilling going back to my high school days of a part time job of manning the smoke house in a German butcher shop I still have never had Tri-Tip.
Please tell what it compares to.  IE Strip Steak, Rib Eye and so on.

I've cooked my share of Tri-Tips but this last one was one of the best I've eaten. As everyone knows ... marbling is where the flavors are.

Not really sure what a Tri-Tip compares to but when cooked the medium rare and sliced thinly against the grain on the bias it virtually melts in your mouth. Everyone knows to slice against the grain but keep in mind that a Tri-Tip has two different grains.

Used to be you could get a Tri-Tip for around $3 to $4 a pound but as it became more popular you're lucky to find them peeled for under $7 to $8 a pound for choice. A steer only has two 2½ to 4 pound Tri-Tip roasts.

If I had to put a finger on what it compares to I would say it falls between a perfectly cooked roast beef and prime rib!!

That looks excellent Pete! I like to sous vide my tri tip to 129 and then put it on a hot grill until it hits about 135. 
If you haven't tried it yet try doing a trisket. It is a tri tip cooked the way the a brisket is. My wife swears she likes it better than brisket done this way.

Here at Fort Stewart they normally do. I don't remember seeing any at Hunter when I worked there.
