Is that a full packer? Looks fantastic

It was a choice packer but had very little flat other than what was covered by the point.  The folks at WinCo normally do me right and find me one like that if I need to fit it in the DC.

Looks great buddy.  How do you like cooking on your Davy Crockett?

I love it.  Holds more than you'd think even though I rack everything I cook in there to keep cleanup to the minimum.  For something like this (or a couple racks of St. Louis spares) I use a medium sheet pan with two grates inside that overlap a tiny bit.  For narrower stuff, I use a smaller sheet pan and a single rack inside.  I think the pan/rack system helps temp control as well and probably smoke ring since everything has a sort of convection cook instead of direct heat from underneath.
