Coconut Lime Chicken on the Grid Iron

My wife found some new rub while she was out and about the other day. It is Tomes Coconut Lime. She wanted
me to cook some chicken and try it on there. Chicken was given a dose of the Coconut Lime and then hung out in
the refrigerator for about 4 hours.


Put into the Grid Iron at 180 degrees for about 45 minutes of smoke.


After the initial 45 minutes I kicked up the temperature to 350 to finish the chicken. Before putting the chicken
into this high temp I coated each piece with some squeeze margarine. Here it is after 50 minutes.


Plated with some oven baked french fries.


This rub is excellent on chicken. I am not sure if it is a close out rub or not but my wife picked it up at a discount
store for $2.95.  Dinner was excellent and the chicken, though not  real crispy skin, it was definitely bite through
and very edible.  8)
