As I mentioned in a post earlier today, I went to the grocery store hungry this morning. I bought some good stuff, grilled some of it tonight for dinner and some to vacuum seal for meals down the road. I figured since the grill was hot, why not use it?
It was 99° here in my part of GA today so I wanted to keep the house cool and cook most of the meal outdoors. I could've and probably should've cooked it all outside but I just did the proteins on my Wife's Keg 5000. She's off camping with my Son, her Brother and the Monster-In-Law so I got to use HER grill! Muhahahaha!!!
I bought a big pack of boneless chicken breasts and marinated half in Italian dressing and the other 3 in Chipotles in adobo. I also rubbed down a pork tenderloin with an espresso rub I made up. I ate a little of the tenderloin and some of the Italian dressing chicken for my meal. The chipotle chicken got dumped into the Kitchenaid and I shredded it with the paddle attachment. I'll portion that out and freeze for use in burritos, tacos, nachos, enchiladas, quesadillas, etc....
The other 2 chicken breast will be vac sealed and frozen for an easy heat and eat meal. Same with the ternderloin.
I sauteed some shrooms and made some red potato and onion skillet taters. It was all kind of a potluck deal. Cleaned out the fridge and pantry today and just threw away a bunch of stuff and found those potatoes in the pantry and shrooms in the fridge. Works for me!
