Stuffed Pork Chops on the PK

While picking up a few steaks at our butcher shop yesterday I saw some nice looking loin pork chops. Hmmm, better get a couple of those too! Today I made up a stuffing of bacon, smoked colby-jack,  green onions and a healthy dose of fresh ground pepper. The chops got carved up to make a pocket in each, then stuffed and buttoned up. :D  Gave them a little Big Ron's In The House rub, got the flat-side of the GG's heated up good before plunking the chubby chops on. They came out nice! Very tasty and very tender! Plated up with a salad and a broccoli dish. A fine Sunday dinner! 8)

Many years ago I store mine at my brothers how while I was deployed and he will not return it.
Worst yet, that what he grills on when I visit.

Question, how to do you button up your chops???

Thanks Art! At least you get to eat food from it occasionally!
I use toothpicks but try to get them horizontal by pinching the ends to go through up and right away down again but try to not be so much up and down. That way they lay flat. Well if it works out then they lay flat! ;)

Art - look at this site:  http://www.fusionbrands.com/   and look at their Food Loops and Food Loop Flame as well. I find them invaluable for trussing anything - up to and including pork loins, hams and turkeys.
