God bless America Brisket

Victory!  Feel like I got my man card back after my ribs yesterday :)

Third brisket in my life. First packer. Found a small 7.5 pound Prime at Costco. I was trying to follow the Aaron Franklin technique.

Simple salt, pepper and garlic. No injecting. Put on the Mak running 250 degrees. Mak ran hotter on the upper rack, more like 275 degrees. Also ran a tube of pellets for a few hours.

This took about 7 hours total I think. Wrapped in butcher paper at about 180 degrees.

Passed the moisture test very well. Nice bark. Did not pass the pull test.





Most of the fat rendered well from the deckle. Was happy about that.

I could eat that right now...Or the first few days of August ;)....Hey -  I think yo might need to give the recipes for the cucumber and onion salad- and that cornbread. :P

And tell Ava she needs to teach us how to make the sophisticated try-color dessert! :)

Nice one Pappy. A great cook on the brisket. The salad and desert recipe also please.
