Vortex cooking
« Reply #-1 on: August 10, 2016, 08:34:32 PM »
Hello all,

Thinking about getting a small Vortex for my WSM 18.5. Just curious on cook times for wings from those who use one often. Also any good wing recipe, techniques, over all tips for getting the most use out of it.

Thanks

HighOnSmoke is the "go-to" guy for the Vortex.

He'll probably be along directly.

Can the vortex be used in a WSM, or is it just for kettles??

I imagine it can be used, but I think it would take the medium or large Vortex since the depth is so much. People are using them in their BGE's so I guess it is workable.

This was asked of me as well...I'm going to trying this configuration...I will be getting a small Vortex as to be able to use it with my WSM 18.5.

Maybe grate, Vortex, then hinged grate sitting on top of the re-bar maybe, perhaps?

Rob, I sent a PM to Tanya from Owens BBQ. She should be here soon to answer your questions since they are a distributor of the vortex.

Pretty sure they make one for the Weber Jumbo Joe I have wanted. It should be ideal for the WSM. Don

Just checked the site and here is the link http://owensbbq.com/vortex.html

There are a few guys that we know of using it in there WSM - some are using it with the WSM broke down and just treating it as a "kettle".

For the 18.5" WSM you would use the Small Vortex.  You wouldn't want to use any larger since it would take away too much of your grate space.

For the 22.5" WSM you would use the Large Vortex.  The Large Vortex is the tallest and works best here, you could use a Medium Vortex as well if you had a kettle and wanted to to use it in both.

*The Large Vortex is only for the XL BGE, 22.5" WSM, or the Ranch kettle.

We are no longer sponsors on the page so I can't post a link, but if you go to the Owens BBQ site there is a Vortex page and it has a video there showing the different style cooking methods, as well as a list of what size fits what type of grill.
