Brisket on the Kettle w/TTT

I wanted to break in the TipTopTemp so I am doing a Brisket flat, some short ribs, and two types of sausages.


Two hours in and holding steady


Three hours and i haven't done anything


Ribs off and added some fuel


Sausage on


Love to cook and eat

How do you have the bottom vents set.
Once I got the temp up to about 180 I closed the bottom vents like the instructions said. When I added more fuel it dropped some so I opened the bottom vents for a few minutes and then closed them again.

Can you lift the lid without it falling off?

I think Key added a silicone bead to his and he was able to but I just used a hand towel and set it aside each time I had to open the grill. I also keep in its box in the house because I don’t want any rust you and I get on this side of the Dixon line.

I didn't get a chance to slice the brisket last night because, well, a brisket is done when it's done.

Looks excellent, My TTT pretty much stays put with no adhesive or anything. I do take the weber lid off and set it flat on the concrete when tending the Q.
