So you want CRISPY chicken skin!

Spatchcock chicken on the Hasty- Bake
Brined overnight, injection butter & chicken rub.
Fire charcoal & cherry chunks.
Chicken directly over fire but fire 23 in below.
Cooked 30 minutes each side over fire temperature was 150 so put indirect to come to 165F

You bring out some great lookin' food whatever you cooker you use.  Pretty easy to tell, though, you have this new one dialed in already.

That chicken looks great so will try it but of couse not on the Hasty Bake.
One question is I do not understand "but fire 23 in below" in "Chicken directly over fire but fire 23 in below."

One question is I do not understand "but fire 23 in below" in "Chicken directly over fire but fire 23 in below."
The Hasty Bake allows you to lower the firebox almost 2 feet below the cooking grate so although you get flare up from dripping grease the flames don't reach the meet
