Pepper Stout Beef Day

I have seen a couple posts from Kona on Pepper Stout Beef and it always looks so good.  I gave it a try yesterday for the first time and - WOW, it was amazing.  Thanks for the posts and the inspiration Kona!  I will absolutely be doing this again  :P

Here the chucks (9.0 Lbs from Costco) this was about 3.5 hours into the smoke.


Just put them in the pan with the peppers and onion and other ingredients (they already smelled fantastic by the way)


Final product following the additional time foiled - pulled and ready to serve


Some of us made sammies with shredded pepperjack - some just ate the beef without the bread (honestly some of us did both)

The total time was right at 8 hours.  I used the recipe someone else posted here (I think it is Kona's) at thewolfepit.com it was a long cook but super easy - perfect for football Sunday.

I absolutely love PSB and it's so easy to make, just time consuming. I've started to add extra peppers into the mix, all colors. Still working on the heat level. First time it was pretty darn spicy, second time not so much after cutting back on the jalapeno seeds. I usually serve mine with cheese and horseradish spread and the other was a Boars Head Pepperhouse Gourmaise.
