Whole Packer Brisket

So I bought this whole brisket USDA Prime from Costco a little while back; it's around a 14 pounder. Took it out injecting with Butcher's Block Prime Brisket Injection and 2 commercial rubs (SP&G and BBQ). Threw it on late last night at 200 degrees. Early this morning Thermowork's Smoke alarm let me know IT was 155. Took it out wrapping in pink butcher paper and mopping outside generously with apple juice, apple cider vinegar and a lil BBQ rub. Increased heat to 225 and let the brisket finish. I pulled when the point was 190 and flat was 195. Probably could have cut the flat at that time and let point go to 200 but instead I placed it in a foil pan, covered with foil and threw on a couple blankets letting it rest for 4 hours in a cooler. It all came out good!
