Carrot Cake/Cheesecake

For Easter I decided to make a carrot cake/cheesecake to bring to my in-laws.  I was going to bake it in my MAK but it was raining one day and way too windy the next so I ended up baking it in the oven.  I first made the cheesecake on Friday night then put the cooled cheesecake in the freezer.  On Saturday morning, I made the 2 rounds of carrot cake.  After cooling, I placed the carrot cakes in the fridge.  Saturday evening, I took the cheesecake out of the freezer while I made the frosting.  I had to do a little trimming of the tops of the carrot cakes as well as to the sides of the cheesecake.  I then applied copious amounts of frosting and put in the fridge to firm up.  After Easter dinner, the monstrosity was cut and served.
