How long did you continue to cook beef ribs after the first three hours?

After the first 3 hour, wrapped them as noted and cooked for about 1hr 45 minutes. Then unwrapped and another 1 -1 .5 hours until they passed the toothpick test.
Why couldn't Noah have swatted the 2 mosquitoes?.
