Beef Short Ribs on the DC Pellet Grill
« Reply #-1 on: March 18, 2018, 05:01:59 PM »
After all the food we have consumed the past couple weeks with the kids here we decided on something light and easy for
tonight. Beef Short ribs are on the menu. I seasoned them with Sure Shot Sid’s Gunpowder seasoning.  I preheated the Davy
Crockett to 150 burning Cherry pellets.  I plan on letting them smoke at 150 for a couple hours then kick up the temperature
to 250 to finish them.

1 hour in and they are starting to get some good color.

2 hours and it is time to put them in a braise. I am using a can of beef broth mixed with worcheshire sauce.

Another 2 hours and the ribs were at 198 and toothpick tender. My plate with a large dinner salad.

The ribs were delicious! This was the first time using this rub and it definitely enhances the beef flavor without overpowering it.
I will definitely be using it again on beef.

Those are great looking ribs. Do you cover them when brazing?

Yes I did. I have the lids that fit those aluminum pans and they work real good.

I've got two packs of short ribs in the freezer; I may take a page out of your playbook on the recipe.  Good looking meal!

I was getting nervous you weren't going to braise. Imagine my relief. I just think short ribs and braising are made for each other.

Great job as always.

So a mixture of beef broth and Worchester about half way up ribs and cover with lid and cook?

I used a 14.5 ounce can of broth and 2 tablespoons of Worcestershire. About a cup and 3/4.
