Chicken Sammiches on the Pit Boss

My super excellent wife felt like some grilled chicken sandwiches tonight so she took 2 boneless breasts and somewhat pounded them thin, coated them with Simply Marvelous Season All rub and grilled them on the Pit Boss 770. She wrapped hers in bacon but I didn't get any of that action, lol.

She also buttered and grilled up one side of Texas Toast on the PB while she was at it. Before heading down to the outdoor kitchen, she cut some taters up into wedges and coated them in EVOO and some Parmesan along with some herbs and popped them into the oven for me to "help" while she cooked the rest of the meal :)

The chicken was topped with Swiss Cheese and then assembled with lettuce, tomatoes, pickles and BBQ sauce on mine, Ranch on hers. It was a very tasty and filling meal. She spoils me!
