First Steaks on the Memphis Pro

This was my first attempt at using the flame zone insert so I have some learning to do but the Memphis is a searing machine as advertised. These are just some sirloins but was the second  delicious week night meal I have had the time to cook on my new Pro.

I would like to do an on going post sharing my experience with the Memphis from what it looks like out of the box to cooking different meals on it. Is this something that is welcomed on this forum? If so, will the way I am sharing pics now be ok?

Nicely done!! I sure do hope you are able to build a thread showing every aspect of the Memphis!  I would love to follow along... :)

First off beautiful looking steaks! Secondly we encourage everyone to post what they cook on since we are not a brand specific forum. We welcome all brands of cookers. Yes, we have sponsors that have their own products but we will not stop anyone from posting their cooks. As Roget said we do love pictures. We also like a "story" with the photos telling us how you cooked them, what ingredients, etc.

Taking another look at those fine looking steaks... what temp was the Memphis at to obtain those results?

Great looking steaks.  I think Sirloin is one of the best tasting steak cuts, especially bottom sirloin.

I am sorry I didn’t get into too much detail but here we go

I actually smoked the chicken breasts and the steaks for about 35 minutes at 200....I pulled the steaks and turned the heat up to 325 to finish the chicken. Steaks were at about 90 degrees per the therma pen. Once the breasts where done I crank’d the temp up to the open flame mode on Low then eventually Hi and threw the steaks on fairly soon after. I was trying to Avoid a grease fire so I didnt let everything heat up to 500 first before changing out the open flame insert. That explains the lack of grate marks but a good sear. As a matter of fact, Since the Memphis pro’s main grates are broken into 4’s and they give you a handy tool to remove them even when hot, I am going to try the “cold grate” reverse sear method.......and a high 550-600 indirect steak cook.....Lol I have lots I want to do and share!
