Home alone with the Memphis

Wife was out with friends and kids also gone, so decided to throw a few things on the Memphis Elite.

Some asparagus spears and prime tenderloin. SPG and a tough of Killer Hogs steak rub



Indirect at 250 for about 30 minutes until 115 or so IT.  Pulled off and cranked temp to 550...seared for about 1:30 per side...

Got into a bottle of Freakshow cab (very good $15  bottle once it breathes a bit).  The cab must of caught up to me as I should of only done about a minute per side...about 5 degrees too much.



Not a bad Wed night meal

Thanks all!  Just the youngest and I home tonight, so a rack of spares went on about 11:30 this morning. Also noticed I’m down to my last 4 bags of pellets so had to get a quote for another 1000lbs of Lumberjack:)

Love spare ribs... actually prefer them St. Louis style, but YUM!  Did some on Easter.  7 hours at 210 degrees and they were perfect.  What temp ya cooking them at?  Also, where do you order your Lumberjack pellets from... directly from the manufacturer?

That steak is cooked just the way I like it, nice job and I am sure it was tasty.
