First cook on new to me GMG DB

I acquired an older GMG DB for a very good price and just needed some cleaning (very dirty I don't know if the previous owner ever cleaned out the grill) and a few new parts.(thread about it is here: http://www.letstalkbbq.com/index.php?topic=22175.0) I had not had a chance to cook on it yet, but this weekend I had some free time so decided to cook a rack of ribs.  I had some ribs that I had seasoned with Gun Powder and frozen, I pulled those out and let them defrost overnight, next day I rubbed with a little more GP and put them in the smoker on the upper grate and turned it, let it go through the cycles and when ready set it to 180 for 1 hour, then 225 for the next 2 hours, pulled and wrapped with foil with some brown sugar, honey and butter then back in smoker for 2 hours @ 250. Pulled and took out of foil and put a light coat of BBQ sauce and put back in the smoker at 275 for 40 minutes.

These ribs turned out really good and I was surprised at the difference in the ribs done in my Bradley compared to these ribs and they were almost cooked the same way.  Definitely makes me excited to do some more cooks on the GMG.

The grill had the old style heat shield and grease tray.


 With these, I was seeing a very large temp discrepancy from left to right.  I order some of the new stainless steel heat shield and grease tray and now it is much better. (30 degrees or so)

My S-i-L has a Bowie.  He has never been happy with it, and he's never put out anything like those ribs on it ! ! !

Get yourself one of these. It will keep the heat and smoke more at cooking grate level and will help even out your temps. GMG's work very well with these.

Thanks, I should of mentioned I have one of those installed, it was one of the first things i bought when I picked up the grill.

Excellent looking ribs! I wouldn't worry too much about the temp on the right side. That is where the chimney is and with your heat shield placement it draws all the heat towards that side. 30 degrees is really no big deal. Higher than that then I would be concerned a bit.

I have only done ribs one time on my GMG (Davey Crockett) & I didn't get nearly as much smoke ring as you did.
I can't decide if I prefer the GMG or the Bradley for ribs. They both turn out a great bone.

You sir are a winner with that cornbread stick/C.O.T.C. I haven't seen those since growing up and my dad would make them on his cast iron cornbread mold.  I saw one several years ago a Cracker Barrel. I should have bought it. My pop's died 13 years ago, and I haven't had one in at least 15 years.

I got the lodge corn bread pan on amazon, the one with seven molds. Thought my kids would love em and they did.
