Prime steak sammiches

Some prime fillet steak sandwiches. Hindsight I wished I had toasted the bread a lot more to give more crunch. Between the fillet falling apart tender and the soft bread, it wasn’t near as good as it should of been. Seasoned up with SPG and some Killer Hogs steak rub for some texture

After 30 minutes of smoke



Cranked temp for sear - that was the grate temp...was too impatient to get him up to 1000 or so



45 seconds per side or so









Some sautéed baby Bella’s and sweetness onion are under the provolone there somewhere

Thanks all. Next time I need a lot more crunch on my roll for better contrasting textures...and I ran out of my horseradish sauce:(
