Chuck roast two ways on the Memphis Pro

Finally after almost two months completely renovating a rental, I had a Saturday to do my first long cook on the Memphis. These two chuck roasts were just over 2 lbs each and were choice grade. I cooked them at 250 on the Memphis w/Smokin Brothers Hickory pellets.


I decided I was going to try a “poor mans Brisket and Chuckie Burnt Ends. I injected both roasts w/beef Stock.


I rubbed the Poor Mans Briskit(going forward PMB) w/this.....only thing I could find at the Grocery store

And then some SPG for the Burnt ends Chuckie(Going forward BEC

You can post, hit save - go back to the post and click on "Modify", and add another photo, or text - then save, and repeat as needed. The limiter is the size of photo files.

Here is my setup...both on second rack w/drip pan underneath

I let them go for two hours then sprayed w/half apple juice half beef stock

Had to leave for a soccer game for two hours so I utilized my app so I could watch the cook

Got back from soccer, admires the scenery for a minute then pulled the Chuckies at 159 and 165 to wrap and cube, sauce, and wrap.





Used this sauce for the burnt ends

Great job on those burnt ends. A chuckie has a better flavor to me than a brisket does.

I let go for a few more hours before the PMB hit 200. I probed and it and the Burnt ends still felt pretty firm. I did this two more times on the half hour before I felt they were ready to come off. Total cook time was about 8 hours.
I let rest for about 45 minutes slightly open so the bark could hopefully crust up some.

I don't use Tapatalk. In fact - I recommend against it. The reason is that it is one more layer of software - that is not always compatible with LTBBQ software. We update...then Tapatalk will not work for you...Tapatalk updates....same problem - incompatibilities.

Final thoughts....I am a newbie to all of this....I got an electric smoker on Black Friday for dirt cheap and caught the big and bought my Memphis 2 months ago. I say this to please ask for your feedback so I can learn here.

The Burnt ends were awesome. They were tender, but not like they wouldn’t stay together tender. This is the first time I tried the Stubbs and it cooked w/the fat and meat it was absolutely delicious! I shared them w/friends around the lake and they all want to know when we are cooking out next.

The PMB on the other hand, not so much. It was ok w/sauce but it was kind of dry....kind of wanted to fall apart when slicing even against the grain....I sliced a few sections and pulled some. It even appears moist.
Did I overlook this....wait too long to wrap?

I don't use Tapatalk. In fact - I recommend against it. The reason is that it is one more layer of software - that is not always compatible with LTBBQ software. We update...then Tapatalk will not work for you...Tapatalk updates....same problem - incompatibilities.

Thanks for your help and patience. I will have to break down and figure out a hosting site I suppose. I backup all my photos to google photos....can I use that as a pic hosting site?
