Kentucky Derby Ribs
« Reply #-1 on: May 11, 2018, 01:25:54 PM »
We love watching the Kentucky Derby every year.  It's a big deal for us.  So a little yard work, drinking mint juleps and smoke n sear ribs.

Wait... Must be drinky, drinky time.  Y'all want a mint julep?. It's early morning but it's Derby day.  So it's ok.

2 ozs of Woodford Kentucky bourbon.
1/2 to 1 ozs of mint infused simple syrup.

Pour into mason jar.

Fill with crushed ice.  Stir.  Add a mint sprig and waa laa.  Kentucky Derby mint julep.

It was way, way too sweet for me.  So I came up with my own mint julep.

Rocks glass filled with ice.  Pour a healthy shot.  Garnish with mint.  Sparky's mint julep.

Got some new stuff.

Cleaned her up and the green machine ready to go.

Set up my SnS with water and apricots wood.  Lite up a weber starter cube and away we go.

I love this kosmo q honey rub for my ribs.  Good color and flavor.

Started off at

Set my weber between 1/4 & 1/2.  Top vent is always open full.

Let it ride. The temp fluctuated between

And

I didn't like how the temp went all over.  I don't have much luck at all controlling temps with the SnS in all the times I have use it.  The charcoal burn doesn't evenly across for me.

I do love my SnS that I got for my jumbo joe that I use in my 22 kettle and the 3/4 grate.

Way too dark for me.

A little glaze on the ribs.

Oh ya.  We're looking good now.

I love seeing all the spices on them.

Not too bad.

Got a baby smoke ring.  I rate these a 5 on my rib scale.

Maybe a 6 but no higher.  The temp wasn't consistent.

.

So, I finished mowing my lawn and showed my wife since I was so proud of myself.

Her first reaction was, "the lines are not straight".  Then she said,  "how many of your mint julep did you have dear?".   My response, " only 2.  Maybe 4?"

No respect.

Looks pretty good to me.  What kind of heat are you getting from the Cherry-Habanero Glaze?

Not much at all.  My wife doesn't like hot and she enjoyed them.

Ribs look great from here Sparky. Some heat fluctuations is OK, but that jump to 311 is a head scratcher...............

Love the choice of apricot wood. Very underrated. I love smoking with fruit woods.

Kosmo's cow cover is excellent stuff, wait till you try that on a chuckie!!

Well, it is 7 am here in Central Texas and I am going to pop a top............if Wendy says anything I will say it is OK with The Spark!!!  :)

P.S. lawn looks great my brother :)

The ribs look good to me.  A couple more mint juleps and those lawn marks will be dead on straight!
