Duroc Pork Butt on the Davy Crockett Pellet Grill

As the title says this is a Comport Farms Duroc pork butt. I was fortunate to have a friend who is in competition BBQ
gift me a competition pack from Comport Farms. This is 4 racks of Babyback ribs and 2 pork butts. I know how much
this costs so I did force persuade him to take some money for it. Anyway...I seasoned the butt yesterday with
a base coat of Killer Hog's AP rub and put a top coating of Meat Church BBQ The Gospel on it. I refrigerated it overnight.

Here it is 1.5 hours into the cook. I put it on my bull racks to raise it up a little for more smoke. I did take it off the
rack at the 2.5 hour mark when I spritzed it with a mixture of vinegar and water. Easier to spritz off the rack.



6 hours into the cook and looking awesome! Grill is holding steady at 250. I am burning Green Mountain Grill Texas Blend pellets.
I will be wrapping it in foil once it hits 160 to 165.



9 hours total cook time and 1.5 hour rest and it was pulled. Notice all the juice in the foil. I did not add any liquid to the foil.



My plate with some homemade pasta salad and Bush's Baked Beans.



OMG! This is got to be the best pork that I have ever eaten. I am so use to the store bought that is good, but this is way beyond just being good.
My wife said that she hated to admit it but once the other pork butt is gone. We will put out the money for more from Comport Farms. Hopefully
the ribs will be just as good. I will be doing a rack of the babybacks on Monday.

A lot of us and I think including yourself  were introduced to Compart Farms meat several years ago at one of the first gatherings in Georgia. Someone had contacted this company and they sent the group a big box of this meat and we fixed several cuts at the gathering and several of us got to take some of this meat home.

It's great meat and many competition cooks are using it with good results.

Your plate looks wonderful almost licked the screen!

Random thought on that pulled pork. Could it be made into a patty that could hold its shape?  Pack the pork into an egg ring and very quickly lightly sear both sides so that it maintains the shape.  Would pre-sauced or un-sauced work best?
