I did a rack of baby backs on the GMG for memorial day dinner.

I rubbed them & left them in the fridge overnight.


These were cooked using the 3-2-1 method @ 225°.
Over the years I have cooked ribs several different ways and I always keep coming back to this method.

This is about five hours into the cook. (with a Jack Daniels sauce)


These came out very good.
This was an uncommonly meaty rack of ribs and possibly could have used a bit more time (or maybe a bit higher cook temp)
I like mine pretty much fall off the bone.  :) :)

They were every moist and had the perfect amount of smoke & a great taste.


This was my first rib cook on the Jim Bowie & I am really happy with the outcome.

Heck they look good to me!   

You rubbed and wrapeed them overnight you said, but when I do that the ribs seem dryer to me.   Do you always do an overnight wrap?

Not always, but usually.
It kinda depends on how much time I have the night before.  :) :)
I haven't noticed a discernible difference in moisture, but will keep that in mind next time to see if I can see a difference.
Maybe do two racks. One with, one without, so to speak.
