Burnt ends using a pork butt

 Well Sunday I finialy got to try he pork butt burnt ends.

Cut up the butt  into cubes (about 1 inch) removed fat and trimed everything.    I used CYM then Super Pig as my rub let sit for 30 mins while getting the RecTec ready to cook.

Cooked for 1.5 hrs at 245 then bumped temp to 265 for another hour (turned twice during this time) then turn the temp to 320 for the remaining time (about 35 to 40 mins) placed cubes into sauce after they were done and let them sit for 30 mins while the RecTec cooled down.  I also used my A-Maze'n smoker box filled with hickory.

Dang good if I say so myself ;)

I've been wanting to try making these, as finding decent pork belly in my immediate area is a real trial.  Good looking cook!
