Got the idea somewhere here on LTBBQ a couple of months ago, but couldn't find the original post... Scored diagonally, smoked for about an hour and a half on the Memphis (250 degrees, maple pellets), sprinkled with brown sugar and cayenne, back on for another half hour for the sugar to melt... I mean I like SPAM, but this took the meat product to a whole 'nother level.

Nice job!  And I agree; this takes Spam to a whole new level of yum!  Even people who swear that they can't stand Spam have tried this and couldn't believe how good it was.

I like to use the Spam Lite (less sodium) and give just a spritz/splash of Bourbon or Jack Daniels right near the end.

The first time I saw this was from Jeanie (Cowgirl) on Cowgirl's Country Blogspot.
