My First Grillgrates Cook

So for my first Grillgrates experience, I took rwalters advice from my earlier "shopping for a gasser" post...

rwalters wrote: "... if you enjoy chicken wings, the Genesis equipped with GG’s was my all time favorite chicken wing cooker. Set the burners to just above low, place the wings on the GG’s and flip about every 15 mins. About an hour later you will have perfectly cooked wings..."

Fresh set of Grillgrates on the Weber, ready for burn-in.

I brined some wings for a couple of hours (I usually do this - I think it keeps them juicy), dusted them with Kosmos Q Dirty Bird rub, and onto the grill. Weber was set to the lowest setting and was plenty hot. Had to turn a burner off after 20 minutes to make a cooler 2-zone fire so they didn't burn. Brushed on some of my fave wing sauce (KC Masterpiece Private Stock BBQ Sauce from Costco, sriracha to taste, and honey), and left a few wings dry.

Here's the sauced wings.

Bottom line. I love the grillgrates. I love the Dirty Bird rub. The dry wings (not pictured) were awesome. And I love my new Weber. We love Pit Barrel Wings, but sometimes I want a cleaner less smokey or charcoal flavor, and these wings fit the bill.

Those look AWESOME! Seems your Weber runs a bit hotter than my old one did... but you figured it out on the fly and produced what looks and sounds like some fantastic wings! That was one thing I really liked... the clean taste. One time, and one time only, I cranked the heat to medium to try to burn off the mess after a wing cook. That was one nasty grease fire. Never did that again.

Darn you... now you’ve given me the itch to get another Weber gasser... lol
