Slow roasted and twice fried porterhouse steak

Saw this recipe on line. You apply rub to the steak, freeze it, fry it for 3 min a side, put in oven (this case I used the RecTec) until 120* , then fry for 2 min a side. Here is the link:

This was more work than a "normal" steak cook but the result was well worth it. It was very moist and tender on the inside and had a kind of crunchy, but not too crisp outer bark. Will do again.



Why couldn't Noah have swatted the 2 mosquitoes?.

What was your total cook time once it was out of the freezer and the cooking started?  What temp did you set the pellet controller for?

That is one unique process. Not sure I have the patience for it but sure would have time to devour that thing. Nice looking steak.

I pretty much followed the recipe. So the oil was at 350*, the smoker at 200*. overall from the time I took it out of the freezer until done was about 2 hours 10 minutes.
Why couldn't Noah have swatted the 2 mosquitoes?.
