Hot & Fast Brisket on the Pit Boss Copperhead

No trim.  Meat on at 0730 at 350. Plated at 1430 after an hour and a half rest at the end plus cut time. Actual cook time 5.5 hours for 13.5 pounds and probed like butter.

Been eyeing one at Lowes lately..............................

I love it!  The amount of rack space as well as the amount of hopper storage are great.  You just need to plan for when you REALLY need to go into the cooker.  Like any other vertical, it looses a lot of heat when that door is open even for a short time.  My only real quality concern is the display.  Hard to read the temps on probe 1/2 sometimes.  They actually sent me a complete replacement controller, but is a bit of a pain to get the old one off and the new one on.  I have enough wireless and wired probes in a pinch, and I haev been able to see it just enough when I look closely.  Besides, I don't use thermometers all that much after all these years running an offset.  It is sturdy as hell, and the unbranded cover is around $20 and about as nice as one of the good Weber covers.  Mine sits outside covered and has had zero issues with rain or very high wind.  I can't say what I would pay for it had I not got it on the $100 markdown, but it is worth well more than that.  It has me seeriously thinking of getting rid of a couple of cookers that it has effectively replaced.
