I sure miss Tri Tip from California.
I sure miss Briskets from Texas.
I can get briskets, just have to drive a ways.
Tri Tip? Butchers here scratch their heads.
However, a nice mid western Perk is soup bones.

During the holidays we (I work at a local Kroger) get all shapes and sizes of Angus grade Prime rib roasts.

Now these come in with the bones on em and they are not separated and tied back on.

Some customers ask to have them cut away.

Some customers do not want them

So the butcher here sells them as Soup Bones and they are priced to move


Check this out for 3 big bones


My little brother works in the meat department and "The Smoke" gets them all  :)

I mean come on Rib Roast bones for pratically nothing!!!  I am all over this.

This wasn't even 9 dollars


Staying with the Central Texas flavor profile




Set over a water pan and 7 hours at 225.  Extra smoke setting and using Traeger Texas Beef pellets. I really like this blend


Foiled for an hour while I got Wendy from work and we set down to these

WOW! That's quite the buy! At that price, you could eat them every night! If you and your brother work at Kroger and he's in the meat department, the butcher should be able to cut you tri-tips. It's NAMP(North American Meat Processors Assoc.) cut 185C.

I don't think he is allowed to freelance and the meats they get for finishing up are already cut up.

I usually cut them off the rib roast myself and often save and freeze them until I get four or five sets and cook 'em up for beef ribs.

Those look like some of the pitiful beef ribs they sell at Walmart for way yonder more money.
