They look mighty fine, sir.

Would you share some details on how you cooked such thick steaks?  I can do the little boys, but one that size would be a challenge if I don't know how.

I like to slow cook em at a low temp, 225, until the IT hits 115 then sear em at a much higher temp, 450 to 500, until the IT hits 130. I then pull them and let em rest for a few minutes.
I used to do the sear method but now I'm all about the reverse sear method.

We recently got a real butcher shop in our town and it has totally revitalized my interest in steak.  Our grocery stores sometimes have good beef but they don't understand that a THICK steak is so much easier to cook than a thin one.  Down at the new butcher shop they have a few in a display case (mostly thick) but most of their sales are cut to order.  Life is good.

WHen I'm at home and cooking on the 26er, it's definately the reverse sear method for me.  But lately most of the steaks that I cook are on my dad's old Chat Broil gasser with a set of GrillGrates.  Here's a sample of a recent Porterhouse cook.

Looking at all these great looking steaks is having me plan a trip to Costco.  Gotta have steak!

Sorry, those are all long gone.  Not sure about this weekend - HT only has Top Round (London Broil) on sale.  :{(
