First brisket

I decided to do my first brisket for Christmas dinner this year. I figured I couldn't mess it up too bad on the PBC. I put it on the grill grate until I got the bark I wanted then wrapped it until it got to 210°. I unwrapped it and it shook like a bowl of jello. It pretty much fell apart. I'd say it was a success!

Very nice! I've cooked a lot of stuff on the PBC, but never a brisket. It's a great cooker to have in your arsenal.

I may try to duplicate this cook.

* What PBC temp and for how long before you wrapped it?
* Then, what PBC temperature while wrapped?
* Did you put anything in the foil with the brisket?

* About how long for the overall cook?
