I'm thinking (I know that's a dangerous thing)...

I have some pulled pork left over... it might be interesting to make a pulled pork omelet with some jalapeno and Jack cheese...

I use pulled pork in omelets all the time.  Makes for a good contrast in texture but needs a little "oomph" like from the jalapenos or maybe some good hot sauce.  I usually toss in a little finely chopped onion, too.

Pulled pork and just about anything sounds OK to me.  That's why I always serve and freeze without sauce (if someone wants it on their own, they can add it).  It remains more versatile for leftovers IMO.

Pulled pork omelet sounds like a great idea.
I like to add smoke pepper for a little smoke but using your idea of smoke pulled pork for the omelet
well that would have to be good.
