Had some leftover smoked chicken so I thought it would be a good idea to turn it into smoked chicken noodle soup...
Mirepoix roasted in the oven and added to a couple of quarts of homemade stock. Added the chicken and let it get happy for awhile. Seasoned with lots of black pepper and some crushed red pepper. Added the egg noodles and simmered until they were al dente.
Serve with a side salad and some crusty bread and it's a great meal for a cold spring night!
